BBQ Blackened Lime and chilli Corn

When I travelled to India for a year this was one of my favourite snacks. The little corn ladies would sit on the beaches with a little coal BBQ and pop the corn on the coals in front of you. They would then rub them with fresh lime, salt, chilli and sell for about 20 cents! I can smell the corn now just talking about it!

Ingredients

Corn

Lime

Chilli 

Salt 

OR

Parmesan

Mayo

Chilli flakes

Coriander

 

Boil your corn on the cob in salted water for 20 mins and then drain. Place on a hot BBQ or use a blow torch to blacken the corn. Roll in any of the above flavours! A great BBQ hit!

You can also stick wooden skewers in the end of the corn to serve!
