BOXTAGON Meal prep night

Last night I decided to volunteer my time to my local BOXTAGON gym to inspire my community how to meal prep!

It’s amazing how many people think meal prepping is hard or just don’t think of doing it! I have always been an organised kind of girl-IN THE KITCHEN! Anything else like getting flights on time or organising my life is a bit chaotic! I can organise everyone else’s life and give organising advice pretty easily but tend to leave anything for myself till the last minute-especially travel plans!

Meal prepping like a boss!

Last night I created some simple but tasty dishes that were clean, healthy and easily made in front of a group of 15 people.

I love cooking and I love talking but I always get a bit nervous doing my meal prep parties just in case their is a budding chef in the audience or something goes wrong! Luckily for me last night was a group of really nice people and I did’nt make any mistakes- well maybe the salmon skin was a ‘tad bit too crispy!’haha

Here are the recipes that I made last night for all of you that came to the class.

 

Chilli mince  

500gm Minced beef

2 bulbs garlic peeled and diced

2 zucchini diced

1 red capsicums diced

1 tins chopped tomatoes

2 tbs ground cumin

2 tbs ground coriander

1 tbs dried chilli flakes- or fresh chilli for more heat

1 bunch coriander

salt pepper

oil of your choice

Method

  1. Fry the onions and garlic till brown then add mince.
  2. Stir till all the minced beef is browned and season well with salt, pepper, cumin, ground coriander and paprika, capsicum and zucchini.
  3. Add the tinned tomatoes, paste or fresh tomatoes and once boiling turn to a simmer.
  4. Simmer for 1 hour then add chilli to taste and a bunch of fresh coriander.(If you find it is too thick add some beef stock to thin it out.)
  5. Taste and season to your liking.
  1. Serve with fresh sour cream and cauliflower rice or zoodles.

 

Green pesto

300gm toasted pinenuts

500gm parmesan grated

50 ml oil of your choice

salt and pepper to taste

2 bunches of washed basil

 

Blitz all the above!

 

Rainbow salsa

1 tin corn kernals

1 red onion diced

3 tomatoes chopped

1 bunch coriander chopped

salt n pepper

dash of sweet chilli to taste

Mix all the above!

 

Chicken breasts baked

Rub your chicken breasts with whatever spices or marinade you like and bake in the oven for about 30 mins!

 

Frittatta

12 eggs

250 gms ham

1 packet fetta

½ cup milk

salt n pepper

 

Heat up a pan with a metal/oven safe handle with oil. Pour mix in. Leave for 5 min and then place in oven for around 45 minutes till cooked!

Flip over when cool and then chop!

 

Rainbow roast veg

1 red capsicum

1/4 pumpkin

1 sweet potato

2 zucchini

1 red onion

rosemary 2 sprigs

1 bulb garlic peeled and chopped

 

Throw the pumpkin and potato zucchini in oven with salt pepper olive oil and garlic, herbs and roast at 200 for 20 min. Add the rest of the veggies and give it another 15 mins.

 

Sweet potato chips

2 sweet potatoes washed and chopped

Mix with olive oil, paprika, salt , pepper , garlic and rosemary.

Roast on a tray for about 1 hour flipping over in between time on 200.
