Chick Pea Satay Bowl Recipe- Vegan/Vegetarian

This is a super, fast and easy recipe if you are on the go! The sauce is enough for 2-4 portions and keeps for 3 days. Just grab some pre cooked rice, chickpeas and veggie mix and away you go!

1 cup super super green veggie stir fry mix or slaw mix ready chopped.
1 cup cooked brown rice
1 heaped teaspoon Peanut butter
1 tin/cup Chick peas
Sprinkle Peanuts
1/2 Lime
1tbs Chilli flakes
1/2 tin Coconut milk
Salt n pepper


Put coconut milk in pan on simmer and when hot add peanut butter.

Whisk or stir constant.

Add to the sauce salt n pepper to taste, 1 Tbs chilli flakes, 2 tbs sweet chilli OR maple syrup and extra chilli flakes, squeeze of half a lime, and stir till all smooth.

Place veggies, chick peas, nuts, rice on the plate and drizzle with sauce and chilli flakes!
