Cottage pie lunch preps this week

I’ve been undecided between Thai Green chicken curry for this weeks lunches and been dreaming of spag bol with garlic bread!

So this week if you want the Thai Chicken curry recipe check out my earlier blog post!

This week we are going to eat cottage pie/Shepard’s pie topped with cauliflower mash/sweet potato or normal mash!

Add a bit of cheese on top if you want to be a bit naughty because hey it’s not carbs it’s fat! We can’t quit everything! This pie is Keto friendly and also dairy free if you minus the cheese!

 

Shepard’s pie recipe x 7-9 portions

1kg of lamb mince or beef mince

3 brown/white onions

1/2 bunch of flat leaf parsley

6 carrots

1 leek

2 zucchini/courgette

3 bulbs garlic or 5 tablespoons of minced garlic

1 head of cauliflower or 1kg sweet or white potato for the topping

50gm

butter

Cheese of your choice- I love parmesan on this

2 cups of frozen garden peas

1l of beef stock or 5 beef stock cubes and 1L of water

Worcestershire Sauce

Tomato puree

 

Method

Chop up all the vegetables into small pieces.

Chop up the garlic/mince the garlic.

Cut cauliflower into florets.

Grab a big pan of water and put on the boil with some salt.

When it is boiling add the cauliflower or 1kg sweet potato or white potato

 

Fry the onions in oil and garlic till golden and put to the side.

 

Fry the mince in some oil till brown and add to a big pot with onions, garlic, and all the vegetables. Stir and fry for around 5 mins and once pan is hot add the beef stock or the water with 5 stock cubes and 3 tbs of tomato puree.

Give it a good stir and turn on the boil.

Boil for about 15 mins and then turn to med heat for around 1 hour.

Add salt, pepper to taste and a good dash of Worcestershire Sauce.

If you want to thicken it add some gravy mix or a tiny bit of cornflour.

Once it is thick and tasty add half a bunch of chopped parsley.

 

The cauliflower should be cooked now. Drain for about 5 mins, mash like you would potato mash and add 25gm butter, salt and pepper to taste.

 

Pour the mince into an oven tray and place in the fridge or outside if you are in the UK till its cold and it feels firm on top. Once it’s cold spread the cauli mash on top. If you don’t have the time to wait for it to go cold you could try putting the mash on top but unless you are very gentle and spooning it on with 2 spoons it will sink in the mince.

Once you have the cauliflower mash on top sprinkle with the cheese of your choice and place under the grill till crispy!

Portion and sprinkle with some fresh parsley. YUM!

I made the yogurt pots from last week with some frozen mango which were amazing!

Buy some quinoa ready cooked or buy a bag and follow the instructions and mix up with some tuna, salt pepper, red pepper, red onion and a good squeeze of lemon and natural yogurt! YUMM!!!
