Keto/LCHF Chicken Parmy with pork crackle crumb!

This recipe is loved by a lot of my KETO/LCHF customers and me!

Recipe is for 8 meals. Freeze for up to 3 months and eat fresh within 3 days.

Shopping List

8 chicken breasts.

16 rashers bacon.

800gm pork skin.

3 tins tomatoes (Or a jar of tomato pasta sauce if you want quickness!)

1 tablespoon tomato puree

1 bunch basil

1 onion

4 cloves garlic

olive oil

salt n pepper

Grated Cheese of your choice 500gm

Method

1.Season chicken breasts with olive oil, salt and pepper. Place on a baking tray and bake for 40 mins at 180. 

2.Rub pork skin with salt and oil and put in oven with chicken- top shelf- till crispy!

3.Whilst chicken is cooking fry onion and garlic in olive oil, add tomatoes, paste and salt n pepper. Bring to boil and simmer till chicken is cooked. 

4.Place spoonfuls on top of chicken breasts and bacon and add a handful of cheese. Pop back in oven till cheese has melted.

5. Place pieces of crackle on top.

6. Serve with greens of your choice or cauliflower mash!
