In the UK when we grew up we used to have pancakes for dinner on this day with lots of ‘JIF’ lemon and sugar after school. The pancakes were really thin like crepes and pretty boring! Pancakes have evolved so much since my school days and you can literally put anything on them!
Here are some great pancake ideas for you for tomorrow and an easy recipe that anyone can follow!
Easy Pancake Recipe
Shopping list
3 cups milk
2 eggs
4 teaspoons vanilla extract
4 cups self-raising flour
½ teaspoon bicarbonate of soda
1/2 cup caster sugar
50gm butter, melted
Whisk your milk, egg and vanilla together and set aside.
Sift flour and bicarbonate into a bowl then add sugar. Make a well in the centre and add milk, egg and vanilla.
Heat a large non-stick frying pan over medium heat. Brush pan with butter. Using 1/2 cup mixture per pancake for BIG PANCAKES or 1/4 for MINI pancakes, cook pancakes for 3 to 4 minutes or until bubbles appear on surface. Turn and cook for 3 minutes or until cooked through.
